I've thrown together a small test to see which one it is. Bochs decodes 62 F1 7F 08 79 C0 as VCVTSD2USI EAX, XMM0 and emulates it accordingly. I also checked with qemu-system-i386 -enable-kvm -cpu max to hopefully execute the instruction on my physical Ryzen cpu with the same result. So everything including the docs says its EAX.
